Leslie, a senior athlete member from Team Blessed Bodies and busy mom, actress, and producer put THAI EGG STIR-FRY WITH TOMATOES EAT-CLEAN DIET Vegetarian cookbook recipe to the test!
Leslie is currently on-season for her next bikini competition and has been able to fit this recipe into her on-season diet by using her food program, Fitness Print.
Ingredients:
textured soy protein
Bragg’s Liquid Aminos
low-sodium tamari
1 tsp Sucanat
grapeseed oil
yellow onion
cloves garlic
tomato
whole eggs
egg whites
green onions
Thai basil
brown rice
Review By Leslie: “This recipe was so easy to make, and gave me a new perspective on how to use eggs for a meal. The Textured Soy Protein has an odd name that doesn’t do justice to its taste and usefulness—its yummy and easy to use. Someone should rename it 'soy delight', or 'Yum' or something to make it more accessible! Nutritionally, it's like a protein and a starch in one. Taste-wise, it takes on the flavor of the spices it's with, so it's like tofu in that way, and its texture is like a more chewy and slightly nutty brown rice. I liked it.
The whole recipe felt exotic yet actually simple to make. I liked the taste of the sesame oil and the idea and effect of adding sweetener to my Braggs Tamari soy sauce. It was easy to fit into my FitnessPrint competition prep program, and I felt like a pioneer in Asian cuisine as I made it!  Easy to make and yummy to eat—I give it a soup spoon up just like Brandi!”
